Traditionally, feta is a sheep's milk cheese. Often, some goat's milk is blended in. Feta is classified as having between 45 and 60 percent sheep's milk or goat's milk. Less often and much less traditionally, cow's milk can be used to make a feta-style cheese. On the whole, Feta is a pickled curd cheese that has a salty and tangy taste enhanced by the brine solution. The texture depends on the age which can be extremely creamy, or crumbly dry. Upon maturation of 2 months, feta is sold in blocks submerged in the brine.
